Hello Beautiful Followers!
I had a few requests to do a post about what I eat in a day, so here it is! For those of you that do not know, I follow a gluten-free and vegan diet. I try to consume as many raw fruits and veggies as I can, but on days that I feel like my digestion is not up to par I will limit that a bit. Luckily, I have a lot less of those days than before treatment.
I start my day off with 16-20 ounces of celery juice. This was introduced to me by a friend who just found The Medical Medium a few weeks ago, so it is a new addition to my morning ritual. You need to do this consistently every day for a few weeks to see the benefits of it, but I love starting my morning off in such a fresh way. After the celery juice, I drink my mushroom elixir. I do 30 drops of Reishi, 30 drops of Chaga, and 30 drops of Turkey Tail in a small glass with about 8 ounces of water. This helps with mood, immune function, liver function, and has a host of other benefits as well. At this time, I also take a Vitamin C supplement.
Next, I drink 16 ounces of warm water with lemon, 2 tablespoons of apple cider vinegar, 1 tablespoon of turmeric juice, and 1 tablespoon of ginger juice. This also helps with digestion, aids in evening out your blood sugar levels, and helps this girl detox like a MTHFR.

After my ACV/ lemon juice/ turmeric/ ginger drank I make my morning smoothie. I make my smoothie adaptogenic in nature and it is pretty bomb. Haven’t gotten sick of it yet and I’ve been drinking it every weekday since July. Here’s how you make it:
- Add 1 banana
- Add 1 to 1 and a half cups of organic frozen berry blend (mine has strawberries, blueberries, and blackberries)
- Add a handful of spinach
- Add 2 teaspoons of tocos
- Add 1/2 teaspoon of mucuna pruriens
- Add 1/2 teaspoon of ashwagandha (which is actually on sale right now…heck yes!)
- Add 1/2 teaspoon of he shou wu
- Add 1/2 teaspoon of moringa (also on sale)
- Add half a scoop of vegan protein powder
- If you’re feeling dangerous, add a heaping spoonful some almond butter or peanut butter
- Fill with unsweetened almond milk (depends on how liquidy you like it)
- Blend and Enjoy!
**A note on juices… I batch these on Sunday and put in mason jars that are meant for canning. Since I already wake up at 5 am for work, I cannot wake up even earlier to juice. Plus, my family would kill me if they heard that juicer going at that ungodly hour. If I run out mid-week, I will juice at night for the next morning**
Lunch is usually pretty simple. I’ll make chickpea or broccoli salad to snack on, cut up some veggies to eat with hummus, or roast some broccoli and cauliflower to eat. Just depends on what I am in the mood for. I pretty much always also pack a Kite Hill almond milk yogurt or a piece of fruit, too. I always prep my lunches on Sunday so that I don’t feel pressured during the week to worry about it. I am pretty exhausted when I get in from work, so the last thing I want to do when I get in is stress about what the heck I’m packing for lunch for the next day.
Dinner is pretty much always soup. I scour the interwebs for detox soup ideas (try this recipe or this one), and then make a batch of soup to last me the week. I usually put half in the fridge and then the other half in the freezer so that it doesn’t get weird towards the end of the week. Sometimes, I get in and am not hungry at all so I just have some cut up veggies and call it a day, so I skip the soup. Just depends on my mood.
After dinner, I wait about an hour and then make myself a cup of Calm with hot water before bed. It is a magnesium drink that I like to end the day with because it is pretty comforting and lives up to its name 🙂
And there you have it! I know it doesn’t seem like much, but following this regimen helps me feel full and energized throughout the day. I listen to my body. If I’m full, I don’t force myself to eat. If I’m hungry in between meals, I’ll snack on cashews or fresh fruit. I really try to not eat process stuff, but if I am in a pinch I’ll eat whatever is available that meets my dietary needs. Pinterest is definitely a dear friend, and I’m in a number of groups on Facebook that post some pretty great recipes. Also, my Instagram friends post some awesome recipes, too! I tend to find soup inspiration on a variety of different platforms which is great because I tend to get bored with eating the same food all of the time.
